French Countryside Chicken Salad

Imagine yourself enjoying a picnic in Provence with this delicious twist on a classic!

Directions

In a large bowl, mix chicken, almonds, celery, and cranberries. Set aside.

In a small bowl, combine mayonnaise, tarragon, orange zest, and herbs de Provence. Stir into chicken mixture.

This was served at our September 2022 wine club pick-up party with a brioche bun and romaine lettuce. Serving with crusty French bread is also a delicious option!

This is a tasty way to use turkey leftovers during the holiday season.

Ingredients

  • 2 lb cooked chicken breast, coarsely chopped

  • 1 cup Kuhlman Cellars Herbed Marcona Almonds, roughly chopped

  • 1/2 cup celery, finely chopped

  • 3/4 cup dried cranberries

  • 3/4 cup mayonnaise

  • 1 Tbsp Dijon mustard

  • 2 Tbsp fresh tarragon leaves

  • 1 Tbsp orange zest

  • 2 tsp herbs de Provence
