Herbed Almond Lemon Bars
Tart, sweet and savory - lemon bars get a makeover with Kuhlman Cellars Herbed Almonds!
Directions
Preheat the oven to 350 degrees. On a baking sheet, spread almonds and toast for about five minutes. Cool and grind in a food processor or finely chop. Sift together flour, salt, and powdered sugar. Add the almonds and cut in the butter until just firm and lightly golden, about 20 minutes. Let cool slightly.
Beat the eggs and yolks for 1-2 minutes, until well incorporated. Add sugar, lemon juice, lemon zest, flour, baking powder, and butter until well combined. Pour into prepared crust.
Bake at 35o degrees until filling is set and lightly browned - about 25 to 30 minutes. Let cool before cutting into squares.
If desired, dust top with powdered sugar and garnish with fresh thyme.

For the crust:
1 1/2 cup flour
1/3 cup powdered sugar
1/4 tsp salt
1/2 cup Kuhlman Cellars Herbed Almonds
12 tbsp. butter, softened
For the filling:
5 eggs plus 2 yolks
1 1/4 cup sugar
1/2 cup Meyer Lemon juice (about 3 lemons)
Zest from 3 lemons (about 1 1/2 tsp)
1/4 cup flour
1/2 tsp baking powder
