Bacon Infused Pancakes

Breakfast for Dinner?!  YES!  Red wine for Brunch?  YES!  Wine is always welcome on the table and with the Annular Eclipse approaching on October 14, 2023 this is the perfect brunch to celebrate this unique event.  San Antonio will enjoy a 90% totality eclipse around 11:55 AM on October 14, 2023, so make this in advance and give a toast to the Eclipse.

Directions

Brunch meals should be simple and quick! We leverage and combine prepackaged ingredients for this unique meal to speed your day along!

  1. Portion out the pre-made bacon pieces.  If making your own, cut bacon into small strips and render in a pan until crispy.  Remove and set aside on paper towel lined plate and crumble to desired size when cool.

  2. In a bowl, make the pancake mix. For Crown Maple pancakes - add pancake mix, egg, whole milk, butter and mix thoroughly.

  3. After achieving a smooth consistency, add the bacon pieces to batter and combine.

  4. Pre-heat griddle over medium heat.

  5. While griddle is heating, dice strawberries to desired size and set aside.

  6. In a separate bowl - combine heavy cream and syrup.  Whip until smooth peaks form for the whipping cream.  Set aside.

  7. Once griddle is hot, spoon batter onto buttered skillet and allow pancake to cook undisturbed until bubbles form on the top of the pancake.

  8. Flip pancake and allow to finish cooking.

  9. Remove from griddle and put on serving plate.

  10. Once pancakes cool a bit, top with whipped cream and strawberries.

  11. Enjoy!

Notes and Options:

  • Substitute blueberries or bananas for the fruit topping

  • To make this vegetarian, replace bacon pieces with your favorite alternative

Ingredients

  • 1 cup of real bacon bits, or 8 slices cooked and crumbled

  • 1 cup Pancake mix, we recommend Crown Maple Syrup pancake mix

  • 1 large egg

  • 1 cup whole milk

  • ¼ cup butter, melted

  • Fresh strawberries, diced

  • 1 cup, heavy Whipping cream

  • 1 TBSP, Vanilla infused or Bourbon Barrel aged Crown Maple syrup

    Suggested Wine Pairing: 

    • This is a versatile dish - pair a bold red structured red such as Malbec, Syrah or Tempranillo or even a dry full bodied white, such as an unoaked Chardonnay.

    • Kuhlman Cellars Wine: Kuhlman Cellars’ Barranca or Ignis for red wine lovers. White wine lovers, pair our Viognier or Roussanne whites!
